Soul-Warming & Oil Free Dal Dhokli Recipe: A Wholesome One-Pot Delight

INGREDIENTS (Per Serving):

For the dal:

Toor dal ¼ cup
Water 1 cup
Turmeric powder ¼ cup
Red chili powder ½ tsp
Coriander powder ½ tsp
Cumin seeds ¼ tsp
Tomato (finely chopped) ¼ cup
Tamarind paste or lemon juice 1 tsp
Jaggery 1 tsp
Salt to taste
Fresh coriander leaves (chopped) 1 tbsp


For the dhokli:

Whole wheat flour (atta) ¼ cup
Besan (chickpea flour) 1 tbsp
Turmeric powder a pinch
Red chili powder a pinch
Salt a pinch
Warm water as needed to form a dough

 

METHOD:

  1. Cook the Dal: Rinse the toor dal thoroughly and pressure cook with 1 cup water, turmeric powder, and a pinch of salt for 3-4 whistles until soft. Alternatively, simmer in a pot for 25-30 minutes. Mash lightly and set aside.

  2. Prepare the Dhokli Dough: In a bowl, mix whole wheat flour, besan, turmeric, red chili powder, and salt. Add warm water, a teaspoon at a time, to form a firm, smooth dough. Knead for 2-3 minutes, cover, and rest for 10 minutes.

  3. Shape the Dhokli: Divide the dough into 2-3 small balls. Roll each into a thin circle (like a chapati) and cut into small diamond or square shapes (about 1-inch pieces). Set aside.

  4. Cook the Dal Base: In a medium pot, bring the mashed dal to a simmer. Add chopped tomato, red chili powder, coriander powder, cumin seeds, tamarind paste (or lemon juice), jaggery (if using), and salt. Add ½ cup water to adjust consistency. Simmer for 5 minutes until the tomatoes soften.

  5. Add the Dhokli: Gently drop the dhokli pieces into the simmering dal. Stir occasionally to prevent sticking. Cook for 8-10 minutes until the dhokli is soft and cooked through. The dal will thicken slightly as it cooks.

  6. Garnish and Serve: Turn off the heat, garnish with fresh coriander leaves, and serve hot in a bowl. Enjoy this comforting dish as is or with a side of steamed veggies for a complete meal!
