INGREDIENTS (Per Serving):
| Brinjal (Medium) | 1 (200-250g) |
| Potato (Finely chopped) | 1 (small) |
| Onion (finely chopped) | ¼ cup |
| Green chili (finely chopped) | 1 (small) |
| Ginger (Grated) | 1 tsp |
| Cumin powder (roasted) | ½ tsp |
| Chili powder | ¼ tsp |
| Garam masala | ¼ tsp |
| Fresh coriander leaves | 1 tbsp |
| Salt | to taste |
| Lemon juice | 1 tsp |
METHOD:

Roast the Brinjal: Wash the brinjal and pat dry. Roast it directly over a gas flame, turning frequently with tongs, until the skin is charred and the flesh is soft (about 8-10 minutes). Alternatively, bake in a preheated oven at 200°C (400°F) for 20-25 minutes until tender. Let it cool slightly, then peel off the charred skin and mash the flesh in a bowl.

Prepare the Base: In a non-stick pan, dry-roast the chopped onion over medium heat for 2-3 minutes, stirring frequently, until softened and slightly golden. Add a splash of water if it sticks.

Add Spices and Tomato: Add grated ginger, green chili, red chili powder, and roasted cumin powder to the pan. Stir for 30 seconds, then add the chopped tomato. Cook for 3-4 minutes until the tomatoes soften and form a thick mixture. Add a tablespoon of water if needed to prevent sticking.

Combine with Brinjal: Add the mashed brinjal to the pan and mix well. Sprinkle in garam masala and salt. Cook for 5-6 minutes, stirring occasionally, until the flavors meld together.
