| Nuts (chopped) | 1 tbsp |
| Raisins | 5-6 |
| Saffron strands | a pinch |
| Rose petals (dried) | 1 tsp |
METHOD:

Dry Roast the Sooji: In a non-stick pan, dry roast the sooji over medium-low heat for 3-4 minutes, stirring constantly, until it turns aromatic and slightly golden. Be careful not to burn it. Set aside on a plate.

Prepare the Sweet Base: In the same pan, bring ¾ cup water to a gentle boil. Add grated jaggery (or sugar) and stir until fully dissolved, about 1-2 minutes. If using saffron, add the soaked strands and water now.

Cook the Sooji: Lower the heat and slowly add the roasted sooji to the boiling water, stirring continuously to avoid lumps. Cook for 3-5 minutes, stirring occasionally, until the mixture thickens and the sooji absorbs the water.

Add Flavors: Stir in cardamom powder, chopped nuts, and raisins (if using). Cook for another 1-2 minutes until the halwa reaches a soft, pudding-like consistency. Add a splash of water if it feels too thick.
