INGREDIENTS (Per Serving):
For the dal:
| Toor dal | ¼ cup |
| Water | 1 cup |
| Turmeric powder | ¼ cup |
| Red chili powder | ½ tsp |
| Coriander powder | ½ tsp |
| Cumin seeds | ¼ tsp |
| Tomato (finely chopped) | ¼ cup |
| Tamarind paste or lemon juice | 1 tsp |
| Jaggery | 1 tsp |
| Salt | to taste |
| Fresh coriander leaves (chopped) | 1 tbsp |
For the dhokli:
| Whole wheat flour (atta) | ¼ cup |
| Besan (chickpea flour) | 1 tbsp |
| Turmeric powder | a pinch |
| Red chili powder | a pinch |
| Salt | a pinch |
| Warm water | as needed to form a dough |
METHOD:

Cook the Dal: Rinse the toor dal thoroughly and pressure cook with 1 cup water, turmeric powder, and a pinch of salt for 3-4 whistles until soft. Alternatively, simmer in a pot for 25-30 minutes. Mash lightly and set aside.

Prepare the Dhokli Dough: In a bowl, mix whole wheat flour, besan, turmeric, red chili powder, and salt. Add warm water, a teaspoon at a time, to form a firm, smooth dough. Knead for 2-3 minutes, cover, and rest for 10 minutes.

Shape the Dhokli: Divide the dough into 2-3 small balls. Roll each into a thin circle (like a chapati) and cut into small diamond or square shapes (about 1-inch pieces). Set aside.

Cook the Dal Base: In a medium pot, bring the mashed dal to a simmer. Add chopped tomato, red chili powder, coriander powder, cumin seeds, tamarind paste (or lemon juice), jaggery (if using), and salt. Add ½ cup water to adjust consistency. Simmer for 5 minutes until the tomatoes soften.

Add the Dhokli: Gently drop the dhokli pieces into the simmering dal. Stir occasionally to prevent sticking. Cook for 8-10 minutes until the dhokli is soft and cooked through. The dal will thicken slightly as it cooks.

Garnish and Serve: Turn off the heat, garnish with fresh coriander leaves, and serve hot in a bowl. Enjoy this comforting dish as is or with a side of steamed veggies for a complete meal!
