INGREDIENTS:
| Amla | 1 kg |
| Sugar | 1 kg |
| Water for syrup | 650 ml |
| Salt | 20 gram |
| Water for brine | 1 litre |
METHOD:
1. Wash large sized amlas thoroughly.
2. Prick the amlas with stainless steel fork & place in 2% salt solution.
3. Raise the strength of the salt solution by 2% daily till it reaches 8%.
4. Wash the amlas & place in freshly prepared 8% salt solution for a week. Wash the fruits again.
5. Prepare 2% alum solution & boil it. Dip the washed amlas for 5 minutes till soft.
6. Prepare a light syrup by boiling 400 g sugar in 650 ml water.
7. Pour this syrup over the softened amlas, cover & set aside for 24 hours.
8. Next day, drain off the syrup into a sauce pan & add 100 g sugar.
9. Bring to boil & pour over the amlas again. Repeat this for 2 more days. adding 100 g sugar each time.
10. Drain the syrup again & add 150g sugar & citric acid. Add the amlas & boil for 3 minutes & set aside for 48 hours.
11. Repeat step n. 10 using the remaining sugar, leaving fruit to soak in syrup for 4 more days. Now the syrup will be of the consistency of honey.
12. Fill into jars, close the lid & store The Great Oil Free Amla Murabba Recipe.
